Bauxite

In a food processor
Add
2 cups of plain pork rinds
Grind fine.
Add
1 T cayenne
1 T pareseam cheese
2 T lemon zest
1 teaspoon of onion powder
1 T of garlic powder
1/4 teaspoon of tumeric
1 1/4 cups of flour
Mix evenly
 In a bowl mix 2 eggs and rinds and flour. Press into a fish shaped curved aluminium pan.

2 cups of fish fillet ( catfish and trout)
2 cups of shelled shrimp
In a food processor grind fine.
Add
 1/4 cup of butter
1 teaspoon of old bay
1 teaspoon of white pepper
5 tablespoons of seasoned breadcrumbs
3 tablespoons of lemon juice
5 tablespoons of onion dip (in a can)
3 egg yolks
 Mix smooth and spoon in fish pan.
Cook until fish is done   no more than 16-20 minutes.

10 eggs whites
 Whip to a peak
Fold in
4 tablespoons of dill
2 tablespoon powdered buttermilk culture
1/4 cup of mayonnaise
1/4 of chopped cooked bacon
Spoon over fish make pretty bake until peaks are browned.
