Or she balls, ah do ya say? What!

2 cups of peeled diced yucca root boiled soft
1 1/2 cups of plaintains boiled soft
1 cup of shredded coconut
2 egg yolks ( boiled hard)
3 tablespoons of sesame seed oil
1 teaspoon of cayenne

Mix ingredients and smash with a mortal and pesal until smooth and forms a ball....

1 1/2 cups of pumpkin seeds (roasted)
1/2 cups of coconut cream
1 cup of vegetable stock
In a blender mix smooth set aside

Cuan Samba.....
2 cups each.....Roast seasoned ( cayenne, garlic, onion powder, salt, parika) pork and chicken breast ( boneless, 25 to 30 mins.)

5 cups of fried rice cooked in pork stock. ( Fried with 1 cup of onions, 3 -4 cloves of garlic, 1 cup of red pepper)

Mix with 1 cup of chopped sauteed mushrooms, 1 cup of drained spinach chopped.

On a large serving bowl, center the foo-foo, around the foo-foo create a ring of rice. Top with pork and chicken.
Spoon pumpkin sauce over the top.
In a pan, heat 4 Tablespoons of olive oil, 1 teaspoon of cayenne, spoon over top and serve.
